Like a lot of people, I’ve had tons of problems over the years trying to get hard boiled eggs to come out right. Either they’d be overcooked and be more like egg shaped rubber than an egg or they would be in various stages of undercooked ranging from a bit soft to OMG That egg is almost RAW!

About a year and a half ago I wrote about my wife’s Green Bean Casserole, which was her variation on a long time holiday favorite. Around here Thanksgiving or Christmas dinners just wouldn’t be the same without it.

Not only do these make a good side for burgers, hot dogs and generally almost any kind of sandwich, They’re also great by themselves. I like ‘em as an alternative to things like popcorn when watching a movie. Don’t get me wrong, popcorn is great, particularly with the extra butter and some grated Parmesan cheese and some dill weed sprinkled on it but I’m not willing to put up with having to spend the next three days trying to get pieces of the hulls out from between my teeth anymore.
