Cornbread Stuffing That Won’t Nuke Your Weight Loss Plan

Once again it’s getting close to Thanksgiving and that means that people who are trying to lose weight get to decide if they want to just trash their efforts for the holiday or find a way to stay on it. Unfortunately, staying on the plan often ends up getting translated to missing out because there’s a lot of things that traditionally show up on the thanksgiving table that people who are trying to lose weight pretty much need to avoid.

One of the things that people trying to lose weight, especially those (like myself) who need to lose a LOT of weight, end up skipping is the stuffing. Here’s a cornbread stuffing that these folks can actually have some of without trashing their diet plans.

Combine 3 cups of crumbled cornbread, 1 cup of bread crumbs, 2 cups of fat free chicken broth, 1 cup of finely chopped celery, 3/4 cup of finely chopped onion, 2 egg whites, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of poultry seasoning in a bowl and mix well.

Turn this into a non-stick baking dish (or a regular dish coated with non-stick cooking spray) and bake at 350 for 45 minutes or until it’s light brown and has become mostl firm.

This makes 8 servings at 3/4 cup each and works out to an exchange of 1 bread and 1/2 fat

3 cups of crumbled cornbread
1 cup of bread crumbs

1 cup of celery, finely chopped
3/4 cup of onion, finely chopped
2 egg whites
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of poultry seasoning
