Potato Chip Cookies

Yes, you read the title of this post correctly, I found a recipe for Potato Chip cookies buried in my collection. This is one of those things that I probably shouldn’t even make because I just KNOW they’d be a problem with my efforts to lose weight (you can’t eat just one right?) but I just had to share it here so preheat the oven to 375 and let’s get started.

Mix together a cup of butter, a cup of white sugar and a cup of brown sugar until it’s got a creamy consistency. Add two eggs and a teaspoon of vanilla and mix well.

Mix in two cups of crushed potato chips and a 6oz package of butterscotch pieces. Sift together two and a half cups of flour and a teaspoon of baking soda and stir it into the creamed mixture.

Drop teaspoonsful onto a greased baking sheet and bake for ten to tweleve minutes. When they’re done allow ‘em to cool before serving.

1 cup of butter
1 cup of white sugar
1 cup of brown sugar
2 eggs
1 teaspoon of vanilla
2 cups of coarsely crushed potato chips
2 1/2 cups of flour
1 teaspoon of baking soda
1 6oz package of butterscotch pieces
