Chocolate Marzipan Sugar Cookies

Preheat the oven to 350 degrees. While it’s warming up get started with the dough by combining 3/4 cup of sugar, a half cup of brown sugar and a 7 oz package marzipan that’s been cut into chunks in a food processor. Process them until they have a consistency like fine sand.
Transfer mixture to a large bowl. Add a stick and a half of softened butter, a couple teaspoons of vanilla, one and a half teaspoon of baking powder, a half teaspoon of baking
soda, a half teaspoon of salt and a large egg. Use an electric mixer to beat until the mixture is smooth.
Add two cups of all purpose flour and a half cup of unsweetened cocoa and mix until everything’s incorporated. When you’re finished the dough will be very stiff.
Drop 1-tablespoon balls of the dough on a baking sheet lined with parchment paper, leaving a couple inches around the sides. Bake on the oven’s lower rack until the cookies are flat and have a cracked looking surface (about 10 minutes).
The cookies will be very soft. Let them cool for 5 minutes on the baking sheet, then transfer to a rack to cool. If desired, dust cookies with powdered sugar.
This recipe should make about three dozen cookies.

1/2 cup unsweetened cocoa
Powdered sugar, for dusting
