Apple Cinnamon Oatmeal

At first glance something as simple as apple cinnamon oatmeal sounds like something of a serious no-brainer but then if you think about it, the pre-packaged versions that you get at the store all have one thing in common … sugar, lots of sugar.

This makes this particular breakfast (or anytime) treat a no-no for diabetics. I don’t know about anybody else but over the last few years I’ve really come to enjoy oatmeal, especially when it’s apples & cinnamon. This is quite a turnaround from when I was a kid and wouldn’t touch oatmeal of any kind for any reason.

Start by bringing a cup and a half of water to a boil, add 1/4 teaspoon of salt. Next stir in 2/3 cup of quick oats, a medium apple that’s been peeled and grated, a teaspoon of cinnamon and a couple tablespoons of rasins.

Reduce the heat and cook for another minute or so until the water is absorbed. Serve hot with your favorite sugar substitute.

1 1/2 cup of water
1/4 teaspoon of salt
2/3 cup of quick cooking oatmeal
1 medium apple, peeled and grated
1 teaspoon of cinnamon
2 tablespoon of raisins
Sugar substitute to taste
