Turkey Omelet Wannabe

I call this a “Wannabe” omelet because while it comes close, theres a step or two of making a traditional omelet that I decided to skip in favor of making it quicker and easier to make.

I start by prepping some ingredients ahead of time so that I’ve got supplies for several makings. First I take a 1 pound chub of ground turkey, remove the package and set it on a plate in the microwave for 5 minutes or so to thaw. While that’s going, I take about half to three quarters of a green bell pepper and dice it up, then I chop three or four green onions. The onions and the green pepper go into a skillet with a bit of butter or Extra Virgin Olive Oil to Saute.

By the time the turkey is thawed the saute will usually be far enough along to go ahead and add the turkey to the peppers and onions, making sure to break up the turkey thoroughly.

Allow this combination to saute for another few minutes, then remove it from the heat, drain and put it in a storage bowl. For a bit more color, I took an entire head of lettuce, cut it up into five pieces and put it through the food processor until it’s severely chopped, almost but not quite a liquid.

Next, in a microwave safe bowl, break two eggs, add a splash of milk and beat well. Add some of the turkey, peppers and onion mix to the eggs and also add a couple of tablespoons of the lettuce and mix well.

Put this combination in the microwave and cook on HI for about two and a half minutes. At this point you’ll need to take it out, break up the egg and stir well, then put it back in the micro for another two minutes or so. (most micros are different so times are only approximate. These times worked for me, YMMV)

When it’s done, I add some salt & pepper and a dash of ketchup (or mild salsa). Easily a breakfast of champions.

There should easily be enough of the turkey, peppers & onions mixture for several more makings. The same goes for the almost liquid lettuce.

1 pound of ground turkey
1/2 to 3/4 of a green bell pepper
3 green onions
2 eggs
a splash of milk (approx 1/4 cup)
a couple pats of butter OR a turn around the pan with Extra Virgin Ollive Oil
salt, pepper, & whatever other seasonings & condiments to taste.
