Diabetic Friendly Fudge

Fudge is one of those little treats that most people take for granted, simply going for it any time they get the chance. However Diabetics have a problem with all the sugar that goes into normal fudge making. Here’s a fudge recipe that doesn’t use all that sugar.

Melt a square of unsweetened chocolate in the top part of a double boiler over boiling water. Add 1/4 cup of evaporated milk and stir it in thoroughly.

Cook that in for two or three minutes and then add 1/2 teaspoon of vanilla and a teaspoon of liquid artificial sweetener. Stir that in and then spread the mixture on a foil pie pan and chill.

Cut it into 8 pieces and form them into egg shaped balls and roll them in pudding powder or finely chopped nuts.

1 square of unsweetened chocolate
1/4 cup of evaporated milk
1/2 teaspoon of vanilla
1 teaspoon of artificial liquid sweetener
1 package of vanilla or chocolate
artificially sweetened pudding powder
8 tablespoons of finely chopped nuts
