Sugar Free Custard

A custard not only makes a good dessert in and of itself but there’s plenty of recipes that use custard as an ingredient. The problem is that for the most part traditional custard recipes aren’t exactly what you’d call diabetic friendly. That’s why I like this recipe. It is diabetic friendly.

Beat six egg yolks and 1/4 cup of Fruit Sweet until the mixture is thick and has a pale color. Slowly sift in a half cup of flour while you continue beating the mixture.

When the flour is incorporated, pour the mixture into a saucepan and put it on a low heat and slowly add two cups of milk and a teaspoon of vanilla.

Cook this while stirring constantly until it thickens to a custard consistency (this should take about 15 minutes or so). When it’s done melt a tablespoon of butter and pour it over the custard to keep a skin from forming while it cools.

This yields about 3 cups of custard.

6 egg yolks
1/4 cup of Fruit Sweet
1/2 cup of flour
2 cups of milk
1 teaspoon of vanilla
1 tablespoon of butter
