Huevos Rancheros

This is one of my wife’s favorite breakfast dishes of all time and she really hated it when her GERD made it impossible to have her Huevos Rancheros with green chili.

This is a healthy and filling breakfast that’s sure to satisfy your appetite until lunch. and by the way, the green chili is optional.

Toast a tortilla on both sides iin a skillet with olive oil. Fry an egg over easy then put the egg on the tortilla and then top it with some Mexicali beans. Add some shredded Monterey Jack or Cheddar cheese and anything else you’d like. (this would be the point to add the green chili if you’re going to.

Serve it with the tortilla closed or left open.

1 whole wheat flour tortilla
1 teaspoon of olive oil
1 egg
some Mexicali beans
Shredded cheese, Monterey Jack or Cheddar work best
Salsa, Guacamole, or just about any other garnish you prefer.
