Garlic Potato Wedges

I like ‘em as an alternative to things like popcorn when watching a movie. Don’t get me wrong, popcorn is great, particularly with the extra butter and some grated Parmesan cheese and dill weed sprinkled on it but I’m not willing to put up with having to spend the next three days trying to get pieces of the hulls out from between my teeth anymore.
In a 7×11 baking dish, combine a minced clove of garlic, a teaspoon of olive oil, two teaspoons of soy sauce, 1/2 teaspoon of paprika and 1/4 teaspoon of black pepper. Microwave this on high for about 30 seconds or so, just until the garlic softens.
Cut four medium potatoes lengthwise into 6 wedges each. Toss them with the garlic mixture until they’re all thoroughly coated. Microwave on high for about 15 to 18 minutes. Re-arrange the potato wedges at around 5-6 minutes and again at about 12-13 minutes. When the potatoes are all tender they’re done.
Variations on this include adding a teaspoon of minced fresh rosemary and / or thyme and / or dill weed to the garlic mixture. Use any or all depending on what you like. You can also experiment with other herbs and spices as well. A bit of minced red peppers, chili powder or curry powder will certainly wake things up a bit.
Maybe you’d like to add some diced green onions or shallots and of course, lets not forget the idea of taking the cooked wedges, topping them with a half cup or so of your favorite variety of shredded cheese, maybe a few chopped black olives and microwave for a few minutes longer just until the cheese melts.
