Burrito Casserole

I’ve seen I can’t tell you how many different kinds of casserole recipes before and I’ve also seen at some varieties of burrito. Never before have I ever seen the two combined in one dish. The burrito casserole sounds pretty good though, not to mention easy to do. It’s definitely going on my list of things I want to try making soon.

Mix a small can of tomato sauce with a pound of browned ground beef (or turkey!) & onions and set it aside. Soften 5 or 6 tortillas in the microwave for 15 to 30 seconds. spread the first tortilla with refried beans, sprinkle liberally with some grated monterey jack cheese and then put it in the bottom of around 1 1/2 quart casserole.

Spread the second tortilla with a thin layer of beans and put it on top of the first layer. Spread a generous layer of the meat mixture on it and add a generous sprinkling of chopped green chilis followed by a light coating of cheese.

Repeat this pattern of alternating between the bean and cheese combo and the meat and pepper combination. Hold back enough of the beans so that you can spread a thin layer on the topmost tortilla, and cover it with a THICK layer of the grated monterey jack cheese.

Cover the casserole with saran wrap, heat in microwave at medium power for about 10 minutes until it’s heated all the way through.

Serve it up with some salsa and sour cream on the side and you’re good to go

1 can refried beans
12 ounces grated monterey jack cheese
1 can of chopped green chilis
1 small can of tomato sauce
about 5 or 6 flour tortillas
1 pound of ground beef (or ground turkey!) browned with onion & garlic.
(make sure to thoroughly the drain)
