Barbecued Alligator Tail

It’s still pretty much in the heart of winter but we are on the downhill side of it and naturally, we’re all beginning to seriously look forward to spring and the warmer weather that comes with it. Over the next few months more and more people will be getting out their barbecue grills and getting them all cleaned up and ready for the first barbecue of the season.

Of course, part of that is deciding what’s going on the grill first. I mean, seriously, you want that first grilling to be something special, not just a pile of burgers and hot dogs. Oh they’ll probably be part of the picture for certain but at the same time you want to show off a bit with something your guests haven’t had off the grill before.

One great idea for this is barbecued Alligator tail. Unless they live in Cajun country it’s a pretty safe bet that your guests won’t have had it before.

I know what the first question you’re asking is: “Where am I gonna get THAT???” and I’ll grant you that it’s not something that the average supermarket is going to have at the meat counter. However if you take a few seconds to google “where to get Alligator tail” (without the quotes), you’ll find a lot of suppliers that you can get it from. When I did the search just now Google came back with quite a lot:

That done, here’s the details:

Pour some milk in a deep bowl and add some red pepper flakes and a tablespoon of rosemary. Season 4 Alligator tail steaks with 1/4 teaspoon of Cayenne pepper and 1/2 teaspoon of black pepper. Put the steaks in the bowl and add enough milk to cover it completely. Allow this to marinate for three to four hours.

When the time is up, remove the steaks from the marinade and throw out the used marinade. Pat the steaks dry. Re-season them with black and red peppers and add salt to taste.

Brush the steaks with olive oil to keep it from sticking, and grill over hot coals, or
over medium heat in a gas grill for about 10 minutes each side. Brush the steaks with olive oil again when you turn them.

4 Alligator tail steaks about 3/4″ thick
Milk
1/2 teaspoon of black pepper (fresh ground is best if you have it)
1/4 teaspoon of Cayenne pepper
1 tablespoon of Rosemary
Red pepper flakes
