Orange Tapioca Jello

I ran into something kinda strange today. I was looking for a good dessert type recipe to post here because I’m in a dessert kinda mood this morning. However, when I started looking around my files I ran into the strangest phenomenon. I found more Jello recipes than you can shake a stick at (though just why anyone would shake a stick at a Jello recipe is beyond me.).

So, after a while I gave in and started looking over the Jello recipes for something interesting. Sure enough, I found one. Orange Tapioca Jello. Just the name of it is interesting. I’ve been a fan of Tapioca since my Captain Kangaroo days. Orange has been another favorite for at least that long. It’s almost amazing that in almost half a century I’ve never thought of combining the two tastes.

Needless to say, this one is going to the top of my “gotta do this” list.

Combine a 3oz package of vanilla tapioca pudding, a 3oz package of vanilla pudding (not instant) and 3 cups of cold water in a saucepan and cook until the it comes to a boil.

Remove it from the heat and add a 3oz package of orange Jello. Set the pan in the sink in cold water to cool. When it’s completely cool. Add a can of mandarin oranges and an 8oz container of Cool Whip.

Blend everything together and pour it into a dish and chill overnight.

1 3 oz. package of vanilla tapioca pudding
1 3 oz. package of vanilla pudding (not the instant kind)
3 cup cold water
1 3 oz. package of orange Jello
1 can of mandarin oranges, drained
1 8 oz. container of Cool Whip
