Low-Cal Spanish Baked Fish

I’ve always loved a good seafood dish and this one is no exception. In fact, I’m liable to make it sometime soon not only because I’m a seafood lover from way back but also because with the temps in the 30′s at night these days I’ll also take any excuse I can to turn the oven on for a while.

Cut 1 1/2 pounds of fish fillets into serving-sized pieces. Put them in an oven-proof baking dish. Sprinkle them with 1/2 teaspoon of salt, 1/4 teaspoon of paprika and 1/4 teaspoon of pepper. Top this with a green bell pepper cut into rings, a sliced up tomato and a sliced up medium onion.

Cut 2 lemons into wedges and set aside. Mix 2 tabelspoons of lemon juice, 2 tablespoons of olive oil and a minced clove of garlic. Pour this mixture over the fish fillets, COVER
and bake 15 for minutes at 375 degrees. Then remove the cover and bake about 10-13 minutes
longer or until the fish flakes easily.

Serve with the lemon wedges.

1 sliced tomato
1 sliced medium onion
2 tablespoons lemon juice
2 tablespoons olive oil
1 minced garlic clove
2 lemons
