Chili Ramen, My Newest “Breakfast Of Champions”

It is however very good. You just need to remember “moderation in all things” and not go overboard with it.
This dish is actually born out of tragedy. My wife passed away Dec 31st and I wasn’t in any shape to even want to do anything very involved or, to be honest, anything really good. I just wanted to “fill the hole” with as little fuss as possible.
Start out with two of those ramen noodle soup packages. Open ‘em up and set the flavoring packets aside for a bit. Put the noodles in a bowl and add just enough water to cover ‘em. This goes into the microwave for three minutes to cook the noodles.
When the noodles are done, drain the water and then add the contents of the flavoring packets and mix ‘em in really good and cover the dish lightly to keep it from venting away all of it’s heat.
Next, open up a can of chili, I used Armor chili with beans ’cause that’s what I had on hand, you can use whatever you prefer. Dump the chili into a microwave safe bowl, stir in about 1/3 cup of water just to loosen it up a bit and then that gets covered loosely and put in the microwave to cook for two or three minutes.
When the chili is done, add it to the dish of ramen noodles and mix everything together. The result is a Carbaholic’s dream in comfort food.
