Measuring vs “Eyeballing”

When you’re cooking do you measure everything out precisely or do you just “Eyeball it” and use what looks right?

Myself, I try to follow a new recipe pretty closely the first time or two that I make it. Then later I am a lot more likely to just eyeball a lot of measurements. When you’ve gotten used to making a dish, it doesn’t take long before you’re able to judge correct amounts by eye.

I have learned that the one time it’s not ok to eyeball a measurement is when baking. It’s got to do with the chemistry of baking and why dough rises and so on. When baking it’s well worth the time to measure everything carefully. Too much of something or not enough of something else and that cake might turn out to be a manhole cover.
