Seeking Black Olive, Egg & Cheese Recipe

I think it was something over a year ago my wife found this really great recipe that we’ve since managed to lose. It was in a book of black olive recipes put out by the California Olive Industry or something like that.

The recipe in question used a dozen eggs, a couple of cans of minced ripe olives, four cups of shredded cheese, milk (though we don’t remember how much) and four or five other ingredients. Some of those were spices.

This whole thing would be mixed up and put in a glass baking dish and then bake for about an hour or so. I don’t recall if the original recipe called for it but once it was done we would spread some more shredded cheese on top of it and allow it to melt before serving.

How we managed to lose the recipe for something like this that we enjoyed so much we really don’t know but if anyone has ideas about what the recipe might be OR knows were a copy of it can be found then please let me know in a comment.

Edited to add: My wife remembered that the name was likely some kind of vegetable frittata which should help in the search. Whenever we do manage to find it I’ll be posting it here
